Foil Wrapped Bruschetta Chicken

Here is a very easy, proud-to-put-it-on-the-table dish that you will enjoy.

Foil Wrapped Chicken Bruschetta

1 (28 oz) can diced tomatoes, drained
1 (6oz) stuffing mix
2 cloves garlic, minced
6 chicken breasts
1 tsp basil
1 cup mozzarella cheese

Heat oven to 400*. Combine tomatoes, stuffing mix and garlic until just moist. Place one chicken breast on a piece of double foil sprayed with Pam spray. Top chicken with basil, stuffing and cheese. Cover chicken with foil, leaving a little room for expansion. Place packets in baking dish and cook 30-35 minutes. Serve chicken in packets. Viola!

  1. Hey lovely... your blog changed it's look again. I like it. I was thinking over your recipe and it dawned on me that SIX chicken breasts is a lot! Then I remembered you are feeding an army of men and it probably doesn't even fill them all up. HA... I don't envy your grocery bill. Thanks for the recipe. I'm sure it'll be a crowd pleaser around here too!
